    Heat oil in a wide pan. Soften chopped onion and pepper for 8 minutes.

    Add garlic and chilli flakes for 30 seconds.

    Add chopped tomatoes, salt. Cook 8 minutes until reduced and jammy.

    Beat the eggs lightly. Pour into the pan, fold gently with a spatula until just set — don't overcook.
  5. 5
    Crumble feta over, scatter with parsley. Serve straight from the pan with crusty bread.
