The recipe

Instructions

    Wilt the spinach, drain, squeeze. Mix with crumbled feta, chopped herbs, beaten eggs and pepper.

    Melt the butter with the oil.
  3. 3
    Lay 2 sheets of filo, brush with butter mix. Place a sausage of filling along one edge. Roll into a tight log.

    Place on a baking tray. Brush with butter. Repeat with remaining filo.
  5. 5
    Bake at 200°C for 25 minutes until deep golden and shatteringly crisp. Slice diagonally to serve.
