Boat-shaped Turkish flatbread topped with spiced minced lamb, peppers and a slick of egg. Fired hot in the oven. The original ancestor of pizza, arguably better.

The recipe

Instructions

    Mix flour, yeast, salt and water. Knead 10 minutes. Rest covered 90 minutes.

    Brown the lamb with chopped onion 8 minutes. Add garlic, peppers, pepper paste, cumin. Cook 5 more.

    Divide dough into 4. Roll each into a long oval, about 25cm.

    Pile filling down the middle, fold edges up to form a boat.
  5. 5
    Bake at 230°C for 12 minutes. Crack an egg in the centre of each, return for 3 minutes. Top with feta.
