1Grate the cucumber. Salt it and leave 5 minutes. Squeeze to remove water.

2Crush the garlic with salt to a paste.

3In a bowl, whisk yogurt with water until smooth and pourable.

4Stir in cucumber, garlic, chopped fresh dill and mint.

5Drizzle with olive oil, sprinkle with dried mint. Serve cold as a dip or soup.
