The recipe

    Slice the lamb thinly. Marinate 30 minutes with grated onion, crushed garlic, cumin, paprika, allspice and salt.

    For sauce: simmer tomatoes with a clove of crushed garlic for 8 minutes. Season.
  3. 3
    Cook the lamb in a screaming-hot pan, 90 seconds per side until charred. Rest.
  4. 4
    Cut flatbread into chunks. Layer in plates: bread, tomato sauce, lamb slices, yogurt.
  5. 5
    Just before serving, melt the butter until foaming and nutty. Pour over each plate. Top with parsley.
