1Toast peanuts in a dry pan, blend to a coarse powder. Mix with paprika, cayenne, garlic powder, cumin, ginger and salt.

2Slice beef thinly, ideally against the grain. Toss with oil and rub thoroughly with the spice mix.

3Marinate 30 minutes. Thread onto soaked wooden skewers.

4Cook on a screaming-hot griddle pan or BBQ for 3 minutes per side.

5Sprinkle with extra suya powder, sliced raw onion and tomato. Squeeze over lemon. Eat hot.
