The recipe

Instructions

    Toast peanuts in a dry pan, blend to a coarse powder. Mix with paprika, cayenne, garlic powder, cumin, ginger and salt.

    Slice beef thinly, ideally against the grain. Toss with oil and rub thoroughly with the spice mix.

    Marinate 30 minutes. Thread onto soaked wooden skewers.
  4. 4
    Cook on a screaming-hot griddle pan or BBQ for 3 minutes per side.
  5. 5
    Sprinkle with extra suya powder, sliced raw onion and tomato. Squeeze over lemon. Eat hot.
