The recipe

    Whisk flour, eggs, milk and salt to a smooth batter. Rest 30 minutes.

    Heat 4 tbsp oil in a sturdy roasting tin in the oven at 220°C until smoking. Add sausages, cook 10 minutes.

    Pull tin out, pour batter quickly around the sausages — it should sizzle. Return to oven.

    Bake 25 minutes until risen, golden and crisp at the edges. Don't open the door before 20 minutes.

    Meanwhile make onion gravy in a pan: brown sliced onions, sprinkle flour, stock, Worcestershire, simmer.
