A weeknight classic — tinned tuna, pasta, and sweetcorn baked in a creamy cheese sauce. The kind of dinner that uses up store cupboard staples and somehow still tastes like a treat. Crispy cheese on top, comforting beneath.

Instructions

    Preheat the oven to 190°C / Gas 5. Bring a big pan of salted water to the boil and cook the pasta for 2 minutes less than the packet says.

    While the pasta cooks, melt the butter in a saucepan, soften the chopped onion for 4-5 minutes, then stir in the flour. Cook for 1 minute.
  3. 3
    Gradually whisk in the milk, a splash at a time, until you have a smooth sauce. Simmer until thickened, then stir in two-thirds of the cheese, the mustard and a good grind of pepper.

    Drain the pasta, return it to the pan and stir through the cheese sauce, the drained tuna and the sweetcorn.

    Tip everything into a baking dish, scatter over the remaining cheese and bake for 20-25 minutes until golden and bubbling.
