Soft Polish dumplings stuffed with potato and cheese, boiled then pan-fried in butter. Eat with sour cream and crispy onions. Time-consuming to make, brilliant in batches.

The recipe

Instructions

    Make dough: flour, egg, water, salt. Knead 10 minutes. Rest covered 30 minutes.

    Boil potatoes 18 minutes. Mash with cheese, salt and pepper. Cool slightly.
  3. 3
    Roll dough thinly. Cut into 8cm circles. Place a teaspoon of filling on each. Fold over and pinch.

    Boil pierogi in salted water for 4 minutes. Drain.
  5. 5
    Brown chopped onion in butter for 6 minutes. Pan-fry the boiled pierogi until golden. Serve with onions and sour cream.
