1Make dough: flour, egg, water, salt. Knead 10 minutes. Rest covered 30 minutes.

2Boil potatoes 18 minutes. Mash with cheese, salt and pepper. Cool slightly.

3Roll dough thinly. Cut into 8cm circles. Place a teaspoon of filling on each. Fold over and pinch.

4Boil pierogi in salted water for 4 minutes. Drain.

5Brown chopped onion in butter for 6 minutes. Pan-fry the boiled pierogi until golden. Serve with onions and sour cream.
