1Place the bacon joint in a large pot, cover with cold water. Bring to boil, drain. Refill with fresh water.

2Add halved onion, bay, peppercorns, carrots. Simmer 1 hour 45 minutes per kg.

3Quarter the cabbage and add to the pot for the last 15 minutes of cooking.

4For sauce: melt butter, whisk in flour, then milk gradually. Cook to thicken. Stir in mustard.

5Slice bacon thinly. Plate with cabbage and a generous slick of mustard sauce.
