Irish bread that needs no proving and no kneading — flour, buttermilk, soda, salt. Sliced thick, slathered in butter, eaten with anything. Forty-five minutes total.

    Heat the oven to 200°C. Sift flour, bicarb and salt into a bowl.

    Make a well in the middle, pour in the buttermilk. Mix quickly with a knife — don't overwork.
  3. 3
    Tip onto a floured surface, shape into a round 4cm thick. Place on a floured tray.

    Cut a deep cross on top — to "let the fairies out". Dust with extra flour.
  5. 5
    Bake 30-35 minutes until deep golden and hollow-sounding when tapped. Cool on a rack 15 minutes.
