1Heat the oven to 200°C. Sift flour, bicarb and salt into a bowl.

2Make a well in the middle, pour in the buttermilk. Mix quickly with a knife — don't overwork.

3Tip onto a floured surface, shape into a round 4cm thick. Place on a floured tray.

4Cut a deep cross on top — to "let the fairies out". Dust with extra flour.

5Bake 30-35 minutes until deep golden and hollow-sounding when tapped. Cool on a rack 15 minutes.
