1Cube beef, dust with seasoned flour. Brown in batches in oil in a heavy pot.

2Add chopped onion, cook 8 minutes. Stir in tomato puree and sugar.

3Pour in Guinness — let it bubble for 2 minutes. Add stock, carrots, thyme.

4Cover and cook in oven at 150°C for 2 hours.

5Add mushrooms, cook another 30 minutes uncovered to thicken. Serve with mash.
