    Boil 500g of the potatoes for 18 minutes until tender. Drain and mash. Cool.

    Grate the remaining 250g raw potatoes. Squeeze hard through a clean tea towel to remove water.

    In a bowl, combine mashed and grated potato with flour, baking powder, salt, beaten egg and milk.

    Heat butter in a non-stick pan. Drop spoonfuls of batter, flatten gently. Cook 3 minutes per side until golden.

    Eat hot with butter, bacon, fried egg, or a sprinkle of sugar for the sweet version.
