1Whisk flour, sugar, baking powder and salt in a bowl.

2In another bowl, whisk eggs, milk and 50g melted butter.

3Pour wet into dry, mix lightly — leave lumpy. Rest 5 minutes.

4Heat a non-stick pan with a knob of butter. Drop ladlefuls of batter, cook 2 minutes until bubbles form on top. Flip, cook 1 minute.

5Stack on plates, top with butter and a generous pour of maple syrup.
