    Pat the wings dry. Toss with cornstarch, salt and pepper.

    Roast on a wire rack at 220°C for 35-40 minutes until deep golden and crisp.

    Meanwhile, melt butter and stir in hot sauce and vinegar. Keep warm.

    Mix dip: blue cheese (crumbled), sour cream, mayo. Cut celery into batons.
  5. 5
    Toss wings in the buffalo sauce. Pile up with celery and dip on the side.
