1Brown the mince in oil for 5 minutes, drain off fat.

2Add chopped onion and peppers, cook 8 minutes. Add garlic and spices for 1 minute.

3Stir in tomato puree, then tomatoes, drained beans, stock and sugar.

4Simmer uncovered for 30 minutes until thick and rich.

5Taste, adjust salt and chilli. Serve with rice, sour cream and grated cheese.
