1Heat oven to 200°C. Melt the butter in a 23cm cast-iron skillet in the oven.

2Mix cornmeal, flour, sugar, baking powder, salt in a bowl. Whisk eggs and milk in another.

3Combine wet and dry ingredients. Pour in most of the melted butter, stir gently.

4Pour the batter into the hot skillet — it should sizzle. Smooth the top.

5Bake 22-25 minutes until golden and a skewer comes out clean. Serve warm with butter.
