Instructions

    Boil the pasta 2 minutes less than packet instructions. Drain.

    Melt butter, whisk in flour for 1 minute. Add milk gradually, whisking until smooth.

    Cook on low heat, stirring, until thickened — about 5 minutes. Off the heat, stir in most of the cheeses, mustard, nutmeg.

    Mix the sauce with the pasta. Tip into a baking dish, scatter with remaining cheese and breadcrumbs.

    Bake at 200°C for 20 minutes until bubbling and golden on top.
