1Cube the lamb. Brown in oil in a heavy pot, then remove.

2In the same pot, soften sliced onions for 8 minutes. Add lamb back with stock, thyme, bay.

3Cube potatoes and carrots. Add to the pot.

4Bring to a simmer, cover, cook on low for 90 minutes until everything is meltingly soft.

5Taste, adjust salt. Top with chopped parsley. Serve with crusty bread.
