    Cube the lamb. Brown in oil in a heavy pot, then remove.

    In the same pot, soften sliced onions for 8 minutes. Add lamb back with stock, thyme, bay.
  3. 3
    Cube potatoes and carrots. Add to the pot.

    Bring to a simmer, cover, cook on low for 90 minutes until everything is meltingly soft.
  5. 5
    Taste, adjust salt. Top with chopped parsley. Serve with crusty bread.
